Rudolph, of course! Friday was Bethany's Christmas party at school. They were having cupcakes, cookies, chips. Guess what I was assigned to bring? A VEGGIE plate. Really?? At the Christmas party where the other options for the kiddos were sweets? Ummm, if I was 5, you wouldn't get me to eat a carrot stick instead of a cupcake covered with delicious sugary frosting and tons of sprinkles. I was not about to be the uncool mom either so I figured out a way to at least make a cute veggie snack. Meet Mr. Rudolph...
Isn't he cute! Here's all there is to him... a cucumber slice, half a cherry tomato, two twisty pretzels, and two raisins. The stuff holding it all together is a yummy cream cheese - ranch dressing mix (thanks for the idea Andrea!) Not only were these little darlings cute, but they actually were tasty! I made 30 and only half came back home, so since I was up again cupcakes and cookies, I'll call those stats a win :)
